WE MADE IT!!

Yes, we made it to ALASKA. It isn't too cold here. I believe Canada got to be -20 at one point, and the dog refused to go to the bathroom that day. It's only about 30 and will snow all week. It was a beautiful 8 day drive and I don't believe I will ever do that again, but it was a fun experience. We got to meet a few relatives and see the country side. I do have lots of pictures so I will just add a few for right now. I mostly wanted everyone to know we are ALIVE. We can't waite to explore Alaska. It really is beautiful here, even under all the snow. Trevor and I start work next week so we will update you on how all that goes. Our apartment is super small, but it's in a great location, and pretty nice.

Star of the Week

Haili is Star of the Week at school so, we made a big poster with a bunch of her pictures on it and added little bits of what she loves to do. We also add a scrapbook page to a book with all her other classmates in it. I am also going to make a batch of the Cookie dough chocolate chip cookies, if you like cookie dough you will LOVE these cookies. I got the recipe off of the picky palate website, but i will post it so you can make it!


Haili's favorite color is pink and blue. Her favorite food is cereal and chicken nuggets and she loves Hannah Montana.

Her favorite Toy would be her Red Kitchen and her Barbie Scooter.

She loves playing with her brother and her cousin Madison.


Chocolate Chip Cookie Dough Cookies

2 sticks softened butter
¾ Cup brown sugar
¾ Cup sugar
2 eggs
1 teaspoon vanilla
2 ¾ Cup flour
1 teaspoon baking soda
¾ teaspoon salt
1 Cup semi sweet chocolate chips
2 6 oz boxes Chocolate Chip Cookie Dough Bites (I have found them at walmart they are in the candy isle, and usually sold with the movie candy in a box.)

1. Preheat oven to 375 degrees F. In a stand or electric mixer, cream the butter and sugars until well combined. Beat in eggs and vanilla until well mixed. In a separate bowl sift the flour, baking soda and salt. Slowly add to wet ingredients along with the chocolate chips and cookie dough bites until just combined.
2. With a cookie scoop, scoop onto a parchment or silpat lined baking sheet. Bake for 9-11 minutes or until cooked to your liking. I usually take mine out right at 9 minutes for a softer cookie. Let cool on baking sheet for 3-5 minutes then transfer to a cooling rack.

So I can't get any pics on my computer right now but today we are going to a friends house to enjoy the Super Bowl. I am making one of my favorite desserts and thought you all would like it. It's soooo tasty but you have to follow the directions exactly to make it turn out just right, and be prepared it does take some time to make. Megan I think you will LOVE this!!

PEACH CHEESECAKE

CRUST:
2 1/2 cups crushed graham crackers
1 cube melted butter
6 Tbsp confectioners sugar

Mix together smash on 9x13 pan, leaving some of the graham mix to sprinkle for topping.

FILLING:
2 cup water
2 Tbsp cornstarch
1 cup sugar
3 oz pkg peach gelatin
4 cups sliced peaches

Cook water, cornstarch and sugar on medium heat until clear and thick. Remove and add gelatin let cool add peaches and pour over crust and chill until firm.

TOPPING:
8 oz cream cheese
3 Tbsp milk
1 cup confectioners sugar
2 cups cool whip

Mix cream cheese, milk and sugar. Stir in cool whip. Spread on top of peach mix. sprinkle crumb mix over top and serve.

So some of you may already know, but we are moving!! Trevor is on his second interview for a job in Alaska. So we are packing up and moving to Las Vegas. Trevor will commute back and forth. Well, he will work two weeks and have two weeks off. We are super excited about this job. We will need ALL your prayers! But so far everything seems to be falling into place and I feel this is what we should be doing. So there will be sometime before I post again, moving is getting harder and harder especially when you love the place you are leaving. Arizona is absolutely beautiful and there is so much to do here. Trevor is currently working at the Scottsdale airport which is across the street from the Barrett Jackson Auction. So we see so many beautiful cars!! Anyone who is in to sports this is the place to be! We have enjoyed going to the baseball games with the kids, and Nascar was pretty awesome. We didn't go to the Super Bowl but we watched the traffic! We have only been on a few hikes but this is the time of year to do it, and the desert is just amazing. One thing I wish we got to do was go to the Grand Canyon, but Trevor has promised me he will fly me over it someday! I will be holding on to that promise! We are very excited to move and hopefully open up more opportunities for our family and continue to grow. Haili will be starting kindergarten and Cody will be in preschool this year. They may never remember living here but I know they have had a blast. Haili is super excited to live near Madison. Everyday she asks me are we moving yet, so she can go play with her cousin. I will update my blog as soon as I can. ~Love~

Merry Christmas

This year we went to Boulder City and spent Christmas with Trevor's parents. Everyone got everything they wanted and more. Christmas eve we read the story of baby Jesus out of the bible, we then watched the Polar Express Movie, and after that grandma gave Haili, Cody, and Madison a bell of their own to hang on the tree. We then set out Christmas cookies for Santa. The next morning the kids had a blast opening up all their presents. And then we ate waffles with Shanna's new waffle maker! We then played Trevor's Wii the rest of the morning. I got a beautiful necklace and earrings from Trevor. Haili will get her kitchen from Santa when we get back home, and Cody will get a race car set also from Santa.

Haili preschool program

Haili had a Christmas program at school. She wanted to be a princess, so her teacher told her she could be a princess angel. She was delighted to be anything princess. They had a cute program set up where they sang all the songs they have learned so far. They also acted out the story of Mary and baby Jesus. After it was all over Santa stopped by and all the kids got to sit on his lap and tell him what they wanted for Christmas. Haili wanted a Red Kitchen, which she got.

Happy Thanksgiving

This year Trevor's parents and Travis came to our apartment and had thanksgiving here. I had to work, but we made the whole meal before noon! Amazing! Shanna and I hit the stores on black friday, we didn't get up until 5 am, but we had fun and got almost all our christmas shopping done. Haili and Cody loved playing with grandma and grandpa, it's a good thing they are not too far away. We enjoyed having them over. Shanna also took our family pictures which turned out pretty good!! Sunday we headed up to Payson with Trevor's parents and had lunch before they headed back to Las Vegas.
We only have 23 days until Christmas! I am pretty excited, we will be in Las Vegas visiting for the weekend. Haili can't wait to see Madison.

Cowgirls and Indians

This week I picked up Haili from preschool like every normal day. I noticed all the kids were dressed up like Indians. They were learning about Thanksgiving. Well out comes my daughter in her pink dress and her cowboy boots. She didn't want to wear the indian outfit because she told her teacher she was a cowgirl. :) She had found Trevors old boots that he wore when he was Haili's age. She only takes them off when she goes to bed at night. They are pretty beat up, but they are adorable. I did get her to try on her indian outfit for me later that day, just long enough for me to take a picture. Then it came off and the boots came back on. pic coming soon.

Good Guys Car Show

We had fun at the Good Guys Car show this weekend. Haili wanted to look inside almost every car! She will definitely be daddy's car buddy. Her favorite was a small roadster no bigger then she was, plus she saw the 10 year old boy driving away in it. They had a lot of gorgeous cars, and some were for sale.
... and a weather update for phoenix, yes it is still 85 degrees this weekend. I am loving it!
